Pumpkin Wheels

 

  • 1 butternut pumpkin, cooked and cooled completely

  • 2sheets of puff pastry

  • 1cup of soft brown sugar

  • 500ml of cream


Method:

  1. Pre-heat the oven to 200*C

  2. Place the 2 sheets of pastry on work surface. Divide the cooled pumpkin between the 2 sheets of pastry and spread evenly. Roll the sheets very carefully. Slice the rolled sheets.

  3. Pack the pin wheels in deep baking dish. Sprinkle the brown sugar evenly over the wheels and pour the cream over.

  4. Bake for 45 min till pin wheels are puffy and sugar caramelised the cream.
