Pumpkin Fritters with Cinnamon Sugar

1 cup cooked and cooled pumpkin of choice
-
1 cup flour
-
1 tsp baking powder
-
Oil for frying
-
1cup sugar
-
2tsp ground cinnamon
Method:
-
Mix pumpkin, flour and baking powder together.
-
Fry spoonfuls of mixture in little bit of oil.
-
It will take about 5 min, turn once.
-
Sprinkle liberally with cinnamon sugar when cooked
