Chicken Potjie

 

  • 6 chicken thighs

  • 250g bacon, diced

  • 4 onions, chopped

  • 60ml apricot jam

  • 100ml water

  • 15ml Worcestershire sauce

  • 750g frozen veggies, any mixed veggies

  • 10 baby potatoes

  • 300g mushrooms

  • 1 packet French onion soup powder

  • 250ml cream

  • Salt, pepper and BBQ spice mix


Method:

  1. Sprinkle BBQ spice over the chicken.

  2.  Put your potjie on the hot coals and pre heat the pot.

  3. Fry the bacon for 5 minutes.

  4. Add onions and apricot jam, fry till soft.

  5. Add the chicken and brown it.

  6. Add the water and Worcesterhire sauce. Put lid on and cook for 15 minutes.

  7. After 15 min add the potatoes and simmer for 10 minutes.

  8. Add frozen veggies and mushrooms, sprinkle with salt and pepper to taste. Lid on and simmer for 30 minutes.

  9. Mix cream and soup powder. Pour over the chicken and simmer till thick and cooked through. Careful not to burn the food in bottom of the pot.
