Malva Pudding
Ingredients:

220g Caster Sugar

2 Free-Range Eggs

1tbs Apricot Jam
-
174g Cake Flour
-
1/2 tsp Bicarbonate Of Soda

1/4 tsp Salt
-
2tbs Butter (Plus extra for greasing)

1tbs Vinegar
-
1/2 Cup Milk
-
Custard - For Serving
Sauce:
-
1 Cup Cream/Evaporated Milk
-
115g Butter
-
50g Brown Sugar
Method:
1. Preheat the oven to 190C.
2. Place the caster sugar, eggs and apricot jam in a large mixing bowl and beat until pale and fluffy. In a separate bowl, sift the cake flour, bicarbonate of soda and salt, then whisk to incorporate.
3. Melt the butter in a saucepan over a low heat, then stir in the vinegar and milk, mixing until combined.
4. Add the dry mixture to the sugar and egg mixture and combine. Add the buttery mixture and whisk until a smooth batter forms.
5. Grease a large ovenproof dish and pour in the mixture. Bake for 35-40 minutes, or until golden in colour and a skewer inserted comes out clean.
6. For the sauce, place all the ingredients in a saucepan over a medium heat and stir until the butter is melted, the sugar is dissolved and the sauce heated through.
7. Pour the sauce over the pudding.
8. Serve with custard and enjoy!
