Oxtail


Ingredients:

  • 1kg Oxtail

  • 500g frozen green beans

  • 1 onion, chopped

  • 500g potatoes, peeled and cubed

  • Soya sauce

  • 1l beef stock

  • Salt and pepper

  • Olive oil



Method:

  1. Fry chopped onion in small amount of olive oil till soft.

  2. Put half of oxtail in pot with the onion, some soya sauce and brown, transfer browned oxtail to a plate and repeat with rest of the oxtail.

  3. Put all the browned oxtail back into pot and pour the beef stock over, cover and simmer for about 2 hours till almost soft. Pour extra water over after an hour if need to.

  4. After about 2 hours add the frozen green beans and potatoes to the oxtail. Cover and simmer till oxtail is soft and potatoes cooked. Add salt and pepper to taste.
