Bobotie with Yellow Rice
For the Bobotie

2 medium onions (sliced)

30 ml oil

1 kilogram minced beef

2 slices brown bread (or white)

250 ml milk
-
15 ml curry powder
-
15 ml sugar
-
10 ml salt
-
2 ml pepper
-
5 ml turmeric
-
25 ml vinegar
-
125 ml raisins
-
45 ml chutney (mild)

2 medium eggs
-
4 bay leaves (optional)
For the rice
-
500 ml rice
-
2 litres water
-
10 ml salt
-
10 ml turmeric
-
1 cinnamon stick
-
150 ml raisins
-
60 ml butter
-
60 ml golden syrup
Method

Soak bread in the milk.

Fry the onions in oil until golden but not browned (caramelised). Add beef mince and saute until browned.

Squeeze out bread and crumble into mince mixture. Add remaining ingredients BUT NOT MILK AND EGG.

Place in greased oven proof dish.

At this point you can make the day before and refrigerate until next day. Press bay leaves into mixture.

Whisk egg and milk together and pour over mince.

Bake at 180 C for 45 minutes or until top is golden and set.

Serve with yellow rice and raisins.
RICE
-
Place rice, water, cinnamon, turmeric and salt in pot and boil until soft.

Place in a colander and rinse under cold water. Add raisins and steam in colander over water until raisins are plump.

Place rice into serving dish; remove cinnamon stick. Add golden syrup and butter and mix in with 2 forks.
